Soup du jour

I love soup.  My husband... not a soup guy.  It's not that he doesn't like soup, he just feels like he needs more to chew, more substance I suppose.  He's kind enough to tolerate my love of soup in the fall and winter and I try not to cook it more than once every week and half or so.

I love trying new soup recipes and tweaking old ones to create new flavors.  Of my faves?  Chicken tortilla soup (I have the least authentic but easiest recipe known to man). 

My mom's Cheesy Potato Soup.  When I asked Spencer whether or not he liked this one he said, what's not to like?  Potatoes, cheese, creamy?  He's all in.

Then there's Taylor's mom's Texas Soup.  I've shared this recipe before.  We just call it chili but it's technical name is Texas Soup.  When I tell guests we're having chili they always look at me like I'm weird when I hand them a bowl with beans, tomatoes, meat, and .... corn.  No one's ever said a bad word about though!

Tortellini Soup!  YUM!  I love tortellini and paired with a tomato base, veggies, and meat.  Delish!

Minestrone is another good one.  I order that at Olive Garden with a side of 11 breadsticks please!

The latest soup craze I'm on is Taco Noodle soup.  Sound weird?  So good!  It's a delicious combo of black beans (one of my fave proteins), tomatoes, taco seasoning, and elbow macaroni.

Do you eat soup?  What are you favorites... recipes please!  Spencer will be so thrilled when I tell him that we're having soup every day so I can try all of your recipes. :)

  1. Well, I'll give my 2 fav's right now... ( still to this day don't know how to make meals for 2 so you many need to mess around a bit with them most of them could feel at least 6 people)

    Creamy Chicken & Bean soup
    4 cans Refried Beans ( I like the smooth one's with less chunks)
    3 cans Canned White Meat Chicken (or left overs from a roast chicken that equals about 4 cups of chopped cooked chicken white or dark meat)
    2 cans Rotel tomatoes & green chili's (I puree ours cause i don't like the chunks) lol
    1 can chicken broth (about 1 1/2 cups)
    I usually put in about half a packet of taco seasoning (probably around 1 -2 Tablespoons)

    You mix all ingredients together in a big pot & let cook for 30 min. Or until cooked all the way through. We usually cut up flour tortilla's and fry them in a frypan until light brown and use them as chips to dip in our soup. I also think I would enjoy it with some corn in it. But Jeff doesn't like corn so we don't get that. It's very good. And one that works very well to freeze and eat again later.

    My other favorite is called Hearty Potato Soup. It takes a lot of milk so we don't get it very often but I LOVE it when I do.

    2 cans cream of potato soup
    6 cups milk
    5-6 cups frozen southern style hash browns
    1-2 lbs cooked ground sausage
    1 Tablespoon Italian seasoning
    salt & pepper

    I usually buy the fast & easy microwavable bacon that only takes about 30 seconds to cook 7 pieces in the microwave. I make a whole package of that and then break it up into tiny pieces (like bacon bits...I am going to try using this next time) I just add it in with the rest when making it.

    Bring the soup to a boil on high heat, stirring occasionally. Reduce heat to med-low; and simmer 10 min. stirring frequently.

    Top each bowl with cheddar cheese. It is really yummy served with whole wheat dinner rolls or toast.

    I have not tried freezing this one, I usually eat it for lunches through the week after making it.
